  • 1 cup apple cider (fresh)
  • 2 large eggs (room temperature)
  • 1 tsp vanilla extract
  • 1 ½ cups chopped apples (Honeycrisp or Granny Smith)
  • ½ cup brown sugar
  • Cinnamon sugar mixture for topping

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan.
  2. In a large bowl, whisk together flour, granulated sugar, baking powder, cinnamon, and salt.
  3. In another bowl, mix melted butter, apple cider, eggs, vanilla extract, and chopped apples until well combined.
  4. Gently fold the wet ingredients into the dry ingredients until just mixed; do not overmix.
  5. Pour the batter into the prepared pan and bake for 30-35 minutes until golden brown and a toothpick comes out clean.
  6. Allow to cool in the pan for about 10 minutes before transferring to a wire rack. While warm, sprinkle generously with cinnamon sugar.
