  • 1 cup apple cider
  • 2 cups all-purpose flour
  • 1 tsp ground cinnamon
  • 1 cup dark brown sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 cup caramel sauce (store-bought or homemade)
  • 1/2 cup powdered sugar

Instructions

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a bowl, whisk together flour, baking powder, baking soda, cinnamon, and salt.
  3. In another bowl, cream butter and sugars until fluffy. Add eggs one at a time and mix in apple cider.
  4. Gradually combine dry ingredients with wet ingredients until just mixed.
  5. Drop rounded tablespoons of dough onto prepared sheets about 2 inches apart.
  6. Bake for 12–15 minutes until edges are golden but centers remain soft. Allow cooling on racks.
  7. Whisk powdered sugar with caramel sauce; spread on half the cookies and sandwich with remaining cookies.
