  • ⅓ cup brown sugar (for streusel)
  • ¼ cup flour (for streusel)
  • ¼ cup melted butter (for streusel)
  • ½ tsp ground cinnamon (for streusel)
  • ¼ cup chopped nuts (pecans or walnuts, optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare muffin tins with liners.
  2. In a bowl, mix flour, granulated sugar, brown sugar, baking powder, baking soda, cinnamon, and salt.
  3. In another bowl, combine pumpkin puree, melted butter, eggs, milk, and vanilla until smooth.
  4. Fold wet ingredients into dry ingredients until just combined; gently stir in chopped apples.
  5. Fill muffin liners three-quarters full with batter.
  6. For the streusel topping, mix oats, brown sugar, flour, melted butter, and cinnamon in a separate bowl. Sprinkle over muffins.
  7. Bake for 20-25 minutes or until golden brown; check with a toothpick for doneness.
