Ingredients

  • 4 cups all-purpose flour
  • 1 cup freshly grated Asiago cheese
  • 2 ¼ tsp active dry yeast (1 packet)
  • 1 ½ cups warm water (110°F/43°C)
  • 1 tbsp sugar
  • 1 tsp salt
  • 2 tbsp extra virgin olive oil

Instructions

  1. In a mixing bowl, combine warm water and sugar. Stir in the yeast and let sit for 5 minutes until bubbly.
  2. Add olive oil and salt to the yeast mixture. Gradually mix in the flour until a soft dough forms.
  3. Knead on a floured surface for 8–10 minutes until smooth and elastic.
  4. Place the dough in an oiled bowl, cover with a damp cloth, and let it rise in a warm area until doubled in size (about 1 hour).
  5. Punch down the dough and fold in half of the grated Asiago cheese.
  6. Shape into a loaf, place in a greased pan, top with remaining cheese, and bake at 375°F (190°C) for 30–35 minutes until golden brown.
