  • 2 tbsp rice vinegar
  • 4 cups mixed greens (spinach and arugula)
  • 1 cup shredded carrots
  • 1 medium cucumber, thinly sliced
  • 2 tsp sesame oil
  • 1 tbsp honey
  • Salt and pepper to taste

Instructions

  1. 1. Preheat oven to 375°F (190°C). Season chicken with salt and pepper; place in a nonstick-coated baking dish.
  2. 2. Bake for 25-30 minutes until the internal temperature reaches 165°F (74°C). Let cool for five minutes before chopping into bite-sized pieces.
  3. 3. In a bowl, whisk together soy sauce, rice vinegar, garlic, honey, and sesame oil until well combined.
  4. 4. In a large bowl, mix greens, shredded carrots, and cucumber. Add chopped chicken.
