Ingredients

  • 2 cups fresh corn kernels (or frozen)
  • 8 oz cream cheese, softened
  • 1 cup sour cream
  • 1 cup shredded Monterey Jack cheese
  • 1 cup shredded cheddar cheese
  • 2 tbsp freshly squeezed lime juice
  • 1 tsp chili powder
  • ¼ cup chopped fresh cilantro
  • Tortilla chips for serving

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix softened cream cheese, sour cream, lime juice, chili powder, and half of the shredded cheese until smooth.
  3. Fold in corn kernels and chopped cilantro until well combined.
  4. Transfer the mixture to a greased baking dish and spread evenly.
  5. Bake for 20-25 minutes until golden brown and bubbly.
  6. Remove from the oven, sprinkle remaining cheese on top, and return to bake for an additional 5 minutes until melted.
