  • Zest of 1 lemon
  • 2 tbsp fresh lemon juice (plus more for glaze)
  • 1 cup powdered sugar (for glaze)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a donut pan.
  2. In a mixing bowl, whisk together flour, sugar, baking powder, and salt.
  3. In another bowl, beat the eggs, milk, lemon zest, and lemon juice until frothy.
  4. Gradually combine the wet ingredients with the dry ingredients until just mixed—do not overmix.
  5. Pour the batter into the donut cavities about two-thirds full.
  6. Bake for 10-12 minutes or until golden brown; a toothpick should come out clean.
  7. While cooling, mix powdered sugar with enough lemon juice to create a smooth glaze.
  8. Dip each cooled donut into the glaze and let it set before serving.
