  • 1 lb lean ground turkey
  • 2 cups fresh spinach, chopped
  • 1/2 cup basil pesto
  • 1/2 cup whole wheat breadcrumbs
  • 1/4 cup freshly grated Parmesan cheese
  • 1 large egg, beaten
  • 1 tsp garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, mix ground turkey, chopped spinach, basil pesto, breadcrumbs, Parmesan cheese, beaten egg, garlic powder, salt, and pepper until evenly combined.
  3. Using a cookie scoop or your hands, form the mixture into meatballs about 1-1.5 inches in diameter.
  4. Place the meatballs on the prepared baking sheet with space in between.
  5. Bake for 20-25 minutes until golden brown and cooked through. Let cool slightly before serving.
