  • 6 cups stale brioche or challah bread, cubed
  • 3 ripe bananas, mashed
  • 4 large eggs
  • 2 cups whole milk (or almond milk)
  • 1 cup brown sugar (light or dark)
  • 1 tsp ground cinnamon
  • 2 tsp pure vanilla extract
  • 4 tbsp unsalted butter, melted

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish with butter.
  2. In a large bowl, tear the stale bread into bite-sized cubes.
  3. Mash the ripe bananas until smooth and mix them into the bread cubes.
  4. In another bowl, whisk together the eggs, milk, brown sugar, vanilla extract, and cinnamon until smooth.
  5. Pour the custard mixture over the bread and banana mixture, gently folding until well-coated.
  6. Transfer to the prepared baking dish and bake for 40-45 minutes until golden brown and set in the center.
