  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1 large egg
  • 1/4 cup unsalted butter (melted)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a mixing bowl, mash the ripe bananas until smooth with some chunks remaining.
  3. In another bowl, whisk together flour, sugar, baking powder, and salt.
  4. In a separate bowl, melt the butter and mix in the egg and vanilla extract.
  5. Combine the wet ingredients with the dry ingredients and fold in the mashed bananas until just combined; do not overmix.
  6. Spoon the batter into the prepared muffin tin, filling each cup two-thirds full.
  7. Bake for 18-20 minutes or until golden brown and a toothpick inserted comes out clean.
