  • 1 lb ground chicken or turkey
  • 1/2 cup fresh basil, finely chopped
  • 2 tbsp fresh ginger, grated
  • 4 garlic cloves, minced

  • 1 can (14 oz) full-fat coconut milk
  • 3 tbsp red curry paste (adjust for spice preference)
  • Juice of 1 lime

Instructions

  1. In a mixing bowl, combine ground chicken or turkey, basil, ginger, garlic, salt, and pepper. Form into one-inch meatballs.
  2. Heat oil in a skillet over medium heat. Brown the meatballs in batches for about 6-8 minutes.
  3. Remove meatballs and add red curry paste to the skillet. Cook for one minute until fragrant.
  4. Stir in coconut milk and return meatballs to the skillet. Simmer on low for 15 minutes.
  5. Just before serving, drizzle lime juice over the dish and serve hot.
