  • 8 oz fettuccine pasta
  • 1 cup mixed bell peppers (red, yellow, green), chopped
  • 1 medium yellow onion, thinly sliced
  • 3 cloves garlic, minced
  • 2 tbsp olive oil
  • 2 cups low-sodium chicken broth
  • 2 tsp Italian seasoning
  • ½ cup freshly grated Parmesan cheese

Instructions

  1. Slice beef against the grain for tenderness. Chop bell peppers and onion; mince garlic.
  2. Heat olive oil in a large skillet over medium-high heat. Sauté onions and garlic until fragrant (about 3 minutes).
  3. Add beef strips; cook until browned on all sides (5-7 minutes).
  4. Stir in bell peppers and Italian seasoning; sauté for another 3-4 minutes.
  5. Add uncooked pasta and chicken broth; bring to a boil, then reduce to simmer. Cover and cook until pasta is al dente (10-12 minutes).
  6. Remove from heat; stir in Parmesan cheese until melted. Adjust seasoning as needed before serving.
