  • 2 cups enchilada sauce (homemade or store-bought)
  • 2 cups shredded cheddar cheese
  • 8 corn tortillas (or flour tortillas)
  • 1 medium onion, chopped
  • 1 cup bell peppers, chopped (any color)
  • 2 tsp chili powder
  • 1 tsp cumin
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • ½ cup sour cream (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×13-inch baking dish with cooking spray.
  2. In a large skillet over medium heat, sauté chopped onions and bell peppers until softened, about 5 minutes.
  3. Add ground beef to the skillet and cook until browned. Season with chili powder, cumin, salt, and pepper. Drain excess fat.
  4. Spread a thin layer of enchilada sauce in the bottom of the prepared dish. Layer half of the tortillas, half of the beef mixture, and half of the cheese.
  5. Repeat with remaining tortillas, beef mixture, enchilada sauce, and top with the remaining cheese.
  6. Bake for 30-35 minutes until bubbly and golden brown.
