- 2 cups shredded cheddar cheese
- 8 corn tortillas (or flour tortillas)
- 1 medium onion, chopped
- 1 cup bell peppers, chopped (any color)
- 2 tsp chili powder
- 1 tsp cumin
- 1 tsp garlic powder
- Salt and pepper to taste
- ½ cup sour cream (optional)
Instructions
- Preheat the oven to 350°F (175°C) and grease a 9×13-inch baking dish with cooking spray.
- In a large skillet over medium heat, sauté chopped onions and bell peppers until softened, about 5 minutes.
- Add ground beef to the skillet and cook until browned. Season with chili powder, cumin, salt, and pepper. Drain excess fat.
- Spread a thin layer of enchilada sauce in the bottom of the prepared dish. Layer half of the tortillas, half of the beef mixture, and half of the cheese.
- Repeat with remaining tortillas, beef mixture, enchilada sauce, and top with the remaining cheese.
- Bake for 30-35 minutes until bubbly and golden brown.
