  • 1 medium onion, diced

  • 4 cups low-sodium vegetable broth
  • 14 oz canned diced tomatoes

Instructions

  1. In a large mixing bowl, combine ground beef, breadcrumbs, parsley, garlic, salt, and pepper. Mix until just combined; avoid overmixing.
  2. Shape the mixture into small meatballs (about 1 inch in diameter).
  3. Heat olive oil in a large pot over medium heat. Cook meatballs until browned on all sides (about 5 minutes), then remove and set aside.
  4. In the same pot, sauté onion and carrots for about 5 minutes until softened.
