Ingredients

Scale
  • 2 cans (15 oz each) black beans, rinsed and drained
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 bell pepper, diced (any color)
  • 2 tsp cumin (preferably freshly ground)
  • 4 cups low-sodium vegetable broth
  • 2 tbsp lime juice (freshly squeezed)
  • ¼ cup fresh cilantro, chopped (optional)

Instructions

  1. In a large pot, heat 2 tsp olive oil over medium heat. Sauté the diced onion and bell pepper until softened, about 5 minutes.
  2. Add minced garlic and cumin; stir for about 30 seconds until fragrant.
  3. Incorporate rinsed black beans and vegetable broth into the pot. Bring to a gentle simmer while stirring occasionally.
  4. Allow the soup to simmer on low heat for about 20 minutes. For creaminess, mash some beans against the pot's sides.
  5. Stir in lime juice and cilantro (if using). Adjust seasoning to taste.
  6. Ladle into bowls and serve hot, garnished with additional cilantro or avocado slices if desired.
