  • 1 cup pig’s blood (fresh)
  • 1 cup all-purpose flour
  • 1 medium onion (finely chopped)
  • 2 cloves garlic (minced)
  • 1 tsp salt
  • ½ tsp black pepper
  • 2 tbsp chopped fresh herbs (parsley or cilantro)
  • Vegetable oil (for frying)

Instructions

  1. In a large mixing bowl, combine the fresh pig's blood, flour, chopped onion, minced garlic, salt, pepper, and fresh herbs until well mixed.
  2. Heat vegetable oil in a skillet over medium heat until shimmering. The oil should be about 350°F for optimal frying.
  3. Using a spoon or small scoop, drop spoonfuls of batter into the hot oil, leaving enough space between each fritter.
  4. Fry for approximately 3-4 minutes on each side or until golden brown and crispy. Use a slotted spoon to turn them gently for even cooking.
