  • 8 oz pasta of your choice
  • 5 oz Boursin cheese (garlic & herb flavor)
  • 2 tbsp olive oil
  • 2 cups fresh spinach
  • 1 cup cherry tomatoes, halved
  • 3 cloves garlic, minced
  • ¼ cup grated parmesan cheese

Instructions

  1. Cook pasta according to package instructions until al dente, reserving 1 cup of pasta water before draining.
  2. In a large skillet over medium heat, heat olive oil and sauté minced garlic until fragrant (about 1 minute). Add cherry tomatoes and spinach; cook until softened.
  3. Lower the heat and stir in Boursin cheese with a splash of reserved pasta water until creamy.
  4. Toss drained pasta into the skillet, mixing well. Add more reserved water if needed for desired creaminess.
  5. Serve hot topped with grated parmesan.
