  • 4 large flour tortillas
  • 6 large eggs
  • 6 strips of bacon or 1 cup cooked sausage
  • 1 cup shredded cheddar cheese
  • ½ cup salsa or pico de gallo
  • 1 avocado, sliced (optional)
  • Fresh cilantro (optional)

Instructions

  1. Prepare your ingredients: Chop any additional vegetables you want to include.
  2. Crisp the bacon in a skillet over medium heat until crispy; drain excess grease but leave some for flavor.
  3. In a bowl, whisk together eggs with salt and pepper. Pour into the skillet and scramble until just set.
  4. Sprinkle cheese over the eggs and gently mix until melted; remove from heat.
  5. Lay a tortilla flat, spoon in egg mixture, add bacon or sausage, and top with salsa and avocado if desired.
  6. Fold in sides of the tortilla and roll tightly from bottom to top. Cut in half if sharing.
