  • 4 large eggs
  • 1 cup granulated sugar
  • 1 cup all-purpose flour
  • ½ cup unsweetened cocoa powder
  • 1 cup heavy cream
  • 2 cups confectioners' sugar (for dusting)
  • 1 tsp vanilla extract
  • 1 cup heavy cream (for ganache)
  • 8 oz dark chocolate (for ganache)
  • Meringue mushrooms (for decoration)

Instructions

  1. Preheat oven to 350°F (175°C). Line a jelly roll pan with parchment paper and lightly grease.
  2. In a large bowl, whisk eggs and granulated sugar until pale and fluffy (about 5 minutes).
  3. Sift together flour and cocoa powder; gently fold into the egg mixture.
  4. Pour batter into the prepared pan, spreading evenly. Bake for 12-15 minutes until springy.
  5. Invert the cake onto a confectioners’ sugar-dusted kitchen towel; peel off parchment and roll the cake while it’s hot.
  6. Unroll the cooled cake, spread whipped cream filling over it, then roll it back up tightly.
  7. Pour warm chocolate ganache over the rolled cake and garnish with meringue mushrooms.
