Instructions
- Preheat oven to 350°F (175°C). Line a jelly roll pan with parchment paper and lightly grease.
- In a large bowl, whisk eggs and granulated sugar until pale and fluffy (about 5 minutes).
- Sift together flour and cocoa powder; gently fold into the egg mixture.
- Pour batter into the prepared pan, spreading evenly. Bake for 12-15 minutes until springy.
- Invert the cake onto a confectioners’ sugar-dusted kitchen towel; peel off parchment and roll the cake while it’s hot.
- Unroll the cooled cake, spread whipped cream filling over it, then roll it back up tightly.
- Pour warm chocolate ganache over the rolled cake and garnish with meringue mushrooms.
