Description

Buffalo chicken stuffed peppers are a flavorful fusion of tender chicken and zesty buffalo sauce, all encased in vibrant bell peppers. Perfect for game day or a quick weeknight dinner.


Ingredients

  • 4 medium bell peppers (red, yellow, or green)
  • 2 boneless skinless chicken breasts (about 1 pound)
  • 1/2 cup buffalo sauce
  • 4 oz cream cheese, softened
  • 1 cup shredded mozzarella cheese
  • 1/4 cup chopped green onions
  • 1 tsp garlic powder
  • 1 tsp onion powder

Instructions

  1. Preheat your oven to 375°F (190°C). Slice tops off bell peppers and remove seeds. Place upright in a baking dish.
  2. In a skillet over medium heat, cook chicken breasts for about 7-10 minutes per side until golden brown. Shred cooked chicken in a bowl.
  3. Mix shredded chicken with cream cheese, buffalo sauce, garlic powder, onion powder, and half of the mozzarella cheese until well combined.
  4. Stuff each pepper with the buffalo chicken mixture and top with remaining mozzarella cheese.
  5. Cover with aluminum foil and bake for 25 minutes. Remove foil and bake an additional 10 minutes until cheese is bubbly and slightly golden.
  6. Garnish with chopped green onions before serving.
