Buffalo chicken stuffed peppers are a flavorful fusion of tender chicken and zesty buffalo sauce, all encased in vibrant bell peppers. Perfect for game day or a quick weeknight dinner.

- 4 medium bell peppers (red, yellow, or green)
- 2 boneless skinless chicken breasts (about 1 pound)
- 1/2 cup buffalo sauce
- 4 oz cream cheese, softened
- 1 cup shredded mozzarella cheese
- 1/4 cup chopped green onions
- 1 tsp garlic powder
- 1 tsp onion powder
Instructions
- Preheat your oven to 375°F (190°C). Slice tops off bell peppers and remove seeds. Place upright in a baking dish.
- In a skillet over medium heat, cook chicken breasts for about 7-10 minutes per side until golden brown. Shred cooked chicken in a bowl.
- Mix shredded chicken with cream cheese, buffalo sauce, garlic powder, onion powder, and half of the mozzarella cheese until well combined.
- Stuff each pepper with the buffalo chicken mixture and top with remaining mozzarella cheese.
- Cover with aluminum foil and bake for 25 minutes. Remove foil and bake an additional 10 minutes until cheese is bubbly and slightly golden.
- Garnish with chopped green onions before serving.
