Ingredients

  • 2 ripe Bosc or Anjou pears, sliced
  • 4 oz creamy Gorgonzola cheese, crumbled
  • 1/2 cup walnuts, toasted
  • 4 cups mixed greens (arugula and spinach)
  • 3 tbsp balsamic vinegar
  • 2 tbsp extra virgin olive oil
  • 1 tbsp sugar
  • Salt and pepper to taste

Instructions

  1. In a skillet over medium heat, melt 1 tbsp butter and add 1 tbsp sugar. Add sliced pears and sauté until golden brown, about 5-7 minutes.
  2. In another pan, toast walnuts over medium heat until fragrant, about 3-5 minutes.
  3. In a large bowl, combine mixed greens with olive oil and balsamic vinegar; toss gently.
  4. Add crumbled Gorgonzola and toasted walnuts to the greens.
  5. Once caramelized, fold in warm pear slices and mix everything gently.
  6. Season with salt and pepper before serving immediately.
