  • 4 cups fresh cauliflower florets
  • 3 cups shredded sharp cheddar cheese
  • 2 cups whole milk
  • 4 tbsp unsalted butter
  • 4 tbsp all-purpose flour
  • 1/2 cup panko breadcrumbs

Instructions

  1. Preheat the oven to 375°F (190°C) and spray a baking dish with nonstick cooking spray.
  2. In a large pot, boil water, add cauliflower florets, and cook for 5 minutes until slightly tender. Drain and set aside.
  3. In a saucepan over medium heat, melt butter. Whisk in flour until smooth, then gradually add milk while whisking continuously until thickened (about 5 minutes). Stir in cheddar cheese until melted.
  4. Combine cooked cauliflower with the cheese sauce, mixing well.
  5. In a bowl, mix panko breadcrumbs with melted butter and a pinch of salt.
  6. Transfer the cauliflower mixture to the baking dish, top with the breadcrumb mixture, and bake for 25 minutes or until golden brown.
