  • 3 cups old-fashioned rolled oats
  • 1 cup chopped nuts (almonds or walnuts)
  • 1/2 cup pure maple syrup
  • 1/4 cup melted coconut oil
  • 1 tsp ground cinnamon
  • 1 tsp ground cardamom
  • 1/2 cup dried fruits (raisins or cranberries)
  • 1/4 tsp salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, mix the rolled oats, chopped nuts, cinnamon, cardamom, and salt until well combined.
  3. In another bowl, whisk together the melted coconut oil and maple syrup. Pour over the dry mixture and stir to coat evenly.
  4. Spread the mixture on the prepared baking sheet and bake for 20-25 minutes, stirring halfway through until golden brown.
  5. Allow to cool slightly before mixing in dried fruits. Cool completely on the baking sheet before transferring to an airtight container.
