  • 1 ripe fresh pineapple (about 2 cups diced)
  • 1 medium red onion, finely chopped
  • 1 jalapeño pepper, seeded and minced
  • 1/4 cup chopped fresh cilantro
  • Juice of 2 limes (about 1/4 cup)
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your grill to medium-high heat (375°F) and lightly oil the grate.
  2. Pat chicken breasts dry and season both sides generously with salt and pepper.
  3. In a bowl, combine diced pineapple, red onion, jalapeño, cilantro, and lime juice; mix well.
