Description

Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup warm water (110°F)
  • 1 tsp fresh yeast (or 1/2 tsp active dry yeast)
  • 1/2 tsp salt
  • 2 tbsp olive oil
  • 1 cup crumbled feta cheese
  • 1/4 cup chopped fresh parsley
  • 2 tbsp pine nuts (optional)

Instructions

  1. In a bowl, combine warm water and yeast; let it froth for about 5 minutes.
  2. Mix in olive oil and salt, then gradually add flour until a soft dough forms.
  3. Knead the dough on a floured surface for 8-10 minutes until smooth and elastic.
  4. Place the dough in an oiled bowl, cover with a damp cloth, and let it rise in a warm spot for about 1 hour or until doubled in size.
  5. In another bowl, combine feta cheese, parsley, and pine nuts (if using) for the filling.
  6. Once the dough has risen, divide it into small balls and roll each into circles about 4 inches wide.
  7. Spoon filling into the center of each circle, fold over to create triangles or half-moons.
  8. Preheat oven to 375°F (190°C). Arrange fatayers on parchment-lined baking sheets, brush with olive oil, and bake for 20-25 minutes until golden brown.
