  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 large egg
  • 1 box (15.25 oz) red velvet cake mix
  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract
  • 2 tbsp cocoa powder
  • 1/2 cup milk chocolate chips (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Cream together butter and sugars until fluffy, about 3-5 minutes. Mix in the egg.
  2. Gradually add the red velvet cake mix and cocoa powder until just combined.
  3. In a separate bowl, beat cream cheese, powdered sugar, and vanilla extract until smooth.
  4. Scoop cookie dough into palm, flatten it, place about 1 tbsp of cheesecake filling in center, and fold dough around it to seal.
