  • 1/2 cup cocoa powder
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter (room temperature)
  • 2 large eggs (room temperature)
  • 1 tbsp red food coloring (gel)
  • 8 oz cream cheese (softened)
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 tsp baking soda
  • 1/2 tsp salt

Instructions

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a bowl, cream together butter and granulated sugar until light and fluffy, about 3 minutes. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract and red food coloring until combined.
  3. In another bowl, whisk together flour, cocoa powder, baking soda, and salt. Gradually add to the wet ingredients until just combined.
  4. For the filling, beat cream cheese with powdered sugar and vanilla until smooth.
  5. Scoop cookie dough into palms, flatten slightly, place about a teaspoon of cheesecake filling in the center, wrap dough around it completely, then roll into balls.
  6. Bake for 10-12 minutes until edges are set; allow to cool before enjoying.
