Instructions

  3. In another bowl, cream the softened butter with brown and granulated sugars until light and fluffy.
  4. Beat in the pumpkin puree, egg, and vanilla extract until smooth.
  5. Fold the dry ingredients into the wet mixture until just combined; avoid overmixing.
  6. Drop spoonfuls of dough onto the prepared baking sheets about 2 inches apart.
  7. Bake for 12–15 minutes until edges are golden but centers remain soft.
  8. Cool on baking sheets for a few minutes before transferring to wire racks.
