  • 4 boneless, skinless chicken breasts (approximately 680g)
  • 4 cloves fresh garlic, minced
  • 2 tbsp olive oil
  • 1/4 cup low-sodium soy sauce
  • 1 cup heavy cream (240ml)
  • 1 cup freshly grated Parmesan cheese (100g)
  • 8 oz fettuccine or penne pasta (225g)

Instructions

  1. 1. Season chicken with salt and pepper. In a skillet, heat olive oil over medium-high heat and cook chicken until golden brown, about 6-7 minutes per side. Remove and let rest.
  2. 2. In the same skillet, add minced garlic and sauté until fragrant, about 1 minute.
  3. 3. Lower heat and add heavy cream and soy sauce; stir to combine. Gradually mix in Parmesan cheese until the sauce is creamy.
  4. 4. Cook pasta according to package instructions until al dente; reserve some pasta water before draining.
  5. 5. Slice chicken and toss with cooked pasta in the sauce, adding reserved pasta water as needed for consistency.
  6. 6. Serve topped with extra Parmesan cheese.
