  • 1 cup long-grain rice
  • 2 cups low-sodium chicken broth
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 cup bell peppers, chopped
  • 1 cup onions, chopped
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Season chicken with salt and pepper. Sear in a skillet over medium heat until golden brown on both sides.
  3. Cook rice according to package instructions using chicken broth instead of water.
  4. In a large bowl, combine cooked rice, cream of mushroom soup, sautéed vegetables, and shredded chicken until well mixed.
  5. Transfer mixture to a greased 9×13 baking dish and spread evenly.
  6. Cover with foil and bake for 25 minutes. Remove foil and bake for an additional 15 minutes until bubbly and golden brown.
