  • 2 medium sweet potatoes, diced (about 2 cups)
  • 2 medium yellow onions, chopped
  • 4 cloves of garlic, minced
  • 4 cups low-sodium chicken broth
  • 1 tsp ground cumin
  • 1 tsp paprika
  • 2 tbsp olive oil
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté onions and garlic until fragrant.
  2. Add the chicken breasts and sear each side for about 5 minutes until golden brown.
  3. Incorporate the diced sweet potatoes into the pot. Stir well to combine.
  4. Pour in the chicken broth and add ground cumin and paprika. Bring to a gentle boil.
  5. Reduce heat, cover, and simmer for about 25 minutes until sweet potatoes are tender.
  6. Remove the chicken, shred it into bite-sized pieces, then return it to the pot.
  7. Stir in fresh parsley before serving.
