  • 34 boneless, skinless chicken breasts (1 lb)
  • 3 cloves fresh garlic, minced
  • 8 flour or corn tortillas
  • 2 cups shredded Monterey Jack and Cheddar cheese blend
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup enchilada sauce (store-bought or homemade)
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 350°F (175°C) and spray a baking dish with nonstick cooking spray.
  2. In a skillet over medium heat, add olive oil and cook seasoned chicken breasts until golden brown (about 5-7 minutes per side).
  3. Allow chicken to cool slightly before shredding it with two forks.
  4. In a bowl, mix shredded chicken with half the cheese, diced tomatoes, cumin, chili powder, salt, and pepper.
  5. Fill each tortilla with the mixture, roll tightly, and place seam-side down in the baking dish.
  6. Pour enchilada sauce over tortillas and sprinkle remaining cheese on top. Bake for 20-25 minutes until bubbly.
