  • 34 boneless skinless chicken breasts
  • 2 tbsp taco seasoning
  • 4 cups fresh lettuce (romaine or iceberg)
  • 1 cup cherry tomatoes, halved
  • 1 ripe avocado, diced
  • 1 cup corn kernels (fresh or frozen)
  • 1 cup shredded cheddar cheese
  • Juice of 2 limes
  • Fresh cilantro (optional)

Instructions

  1. Season the chicken breasts with taco seasoning. Pan-sear over medium heat until golden brown and cooked through, about 6-8 minutes per side.
  2. While the chicken cooks, wash and chop the lettuce into bite-sized pieces. Slice the cherry tomatoes in half and dice the avocado.
  3. Once cooked, shred the chicken using two forks while still warm.
  4. In a large bowl, combine lettuce, tomatoes, corn, avocado, shredded cheese, and shredded chicken.
  5. Squeeze fresh lime juice over the salad mixture and gently toss to combine all flavors.
  6. Serve in bowls or plates with additional cheese or cilantro if desired.
