  • 4 ears fresh corn on the cob
  • 1/4 cup freshly squeezed lime juice (about 2 limes)
  • 1 tsp chili powder
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup finely chopped red onion
  • 2 tbsp olive oil
  • Salt & pepper to taste

Instructions

  1. Prepare your ingredients by shucking the corn and removing silk.
  2. Preheat grill to medium-high heat (400°F). Grill corn for 10-15 minutes, turning occasionally until charred and tender. Let cool slightly.
  3. In a bowl, whisk together lime juice, olive oil, chili powder, salt, and pepper.
  4. Cut kernels off cooled corn into a large mixing bowl. Add red onion and cilantro.
  5. Pour dressing over the corn mixture and toss gently. Serve immediately or chill for 30 minutes to meld flavors.
