  • 3 cloves fresh garlic, minced
  • 1 cup brown rice
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 cup corn (fresh or frozen)
  • 2 tablespoons lime juice (freshly squeezed)
  • ½ cup chipotle sauce (store-bought or homemade)
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C). Spray a baking dish with nonstick cooking spray.
  2. Season chicken breasts with salt and pepper. In a skillet over medium heat, heat olive oil and sauté minced garlic until fragrant. Add chicken breasts and cook until golden brown, about 5 minutes per side.
  3. Chop bell peppers into bite-sized pieces and toss them with corn on a baking sheet. Drizzle with olive oil, season with salt and pepper, then roast in the oven for 15 minutes.
  4. Cook brown rice according to package instructions.
  5. Assemble each bowl starting with a base of brown rice topped with shredded chicken, black beans, roasted veggies, and corn.
  6. Drizzle chipotle sauce over the top, squeeze fresh lime juice for added flavor, and garnish with cilantro if desired.
