  • 2 tbsp granulated sugar
  • 2 tsp baking powder
  • 1 tbsp cocoa powder
  • 1 cup whole milk
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 cup fresh cherries, chopped
  • ½ cup heavy cream (for ganache)
  • ½ cup dark chocolate chips

Instructions

  1. In a bowl, whisk together flour, sugar, baking powder, cocoa powder, and a pinch of salt.
  2. In another bowl, whisk milk, egg, and vanilla until frothy. Combine with dry ingredients gently to avoid lumps.
  3. Fold in chopped cherries.
  4. Preheat a non-stick skillet over medium heat and lightly grease it. Pour ¼ cup batter per pancake and cook until bubbles form (3-4 minutes). Flip and cook until golden brown (2-3 minutes).
  5. For the ganache, melt heavy cream and dark chocolate chips in a saucepan over low heat while pancakes cook.
