  • 3 ripe bananas (mashed)
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup unsweetened cocoa powder
  • 2 tsp espresso powder
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 2 large eggs (room temperature)
  • 1/2 cup vegetable oil or melted butter
  • 1 1/2 cups all-purpose flour
  • Optional: 1/2 cup chopped walnuts or pecans

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×5 inch loaf pan.
  2. In a large mixing bowl, mash the ripe bananas until smooth.
  3. Add granulated sugar, brown sugar, oil (or melted butter), and eggs to the banana mash. Mix until combined.
  4. In another bowl, whisk together cocoa powder, espresso powder, flour, baking soda, baking powder, and salt. Gradually fold this mixture into the wet ingredients until just combined.
  5. If desired, fold in chopped nuts or chocolate chips.
  6. Pour the batter into the prepared loaf pan and bake for 60-70 minutes or until a toothpick inserted comes out clean.
