  • 3/4 cup unsweetened cocoa powder
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1 cup granulated sugar
  • 2 large eggs (room temperature)
  • 1 cup whole milk
  • 1/2 cup vegetable oil (or melted coconut oil)
  • 1 cup semi-sweet chocolate chips
  • 1 tsp peppermint extract
  • Crushed candy canes (optional, for topping)

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a loaf pan.
  2. In a large bowl, whisk together flour, cocoa powder, baking powder, and salt.
  3. In another bowl, beat eggs and mix in sugar until well combined. Add milk and oil; whisk until smooth. Stir in peppermint extract and chocolate chips.
  4. Pour the wet mixture into the dry ingredients. Gently fold until just combined.
  5. Pour batter into the prepared loaf pan and bake for 50-60 minutes or until a toothpick inserted comes out clean with some melted chocolate clinging.
  6. Let cool in the pan for 10 minutes before transferring to a wire rack. Slice once cooled slightly.
