  • ½ cup coconut oil (melted) or unsalted butter
  • 2 tsp vanilla extract
  • 1 tsp peppermint extract

Instructions

  3. In another bowl, mix sugar with melted coconut oil until smooth. Add eggs one at a time, mixing well after each addition.

  5. Gradually add the dry mixture to the wet mixture and stir gently until just combined.
  6. Divide batter evenly between prepared pans and bake for 25-30 minutes or until a toothpick comes out clean.
  7. Allow cakes to cool in pans for 10 minutes before transferring to wire racks. Frost with peppermint frosting once cooled.
