  • 1 box red velvet cake mix (15.25 oz)
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1 cup water
  • 16 oz cream cheese, softened
  • 1 cup granulated sugar
  • 1/2 cup sour cream
  • 3 large eggs (room temperature)
  • 1 tsp pure vanilla extract
  • 2 tbsp unsweetened cocoa powder (sifted)

Instructions

  1. Preheat oven to 325°F (165°C).
  2. In a bowl, combine red velvet cake mix, eggs, oil, and water as directed on the package; mix until smooth.
  3. Pour batter into a greased springform pan and bake for 25-30 minutes or until a toothpick comes out clean. Allow cooling.
  4. In another bowl, beat softened cream cheese until smooth. Gradually add sugar; mix well. Incorporate sour cream, eggs one at a time, vanilla extract, and sifted cocoa powder until fully combined.
  5. Once the cake is cooled, pour half of the cheesecake filling over it followed by the remaining filling.
  6. Bake again for about an hour until set around edges but slightly wobbly in center. Cool at room temperature before refrigerating.
