Instructions
- Preheat oven to 350°F (175°C) and prepare a muffin tin by greasing or lining it with paper liners.
- In a large bowl, whisk together flour, baking powder, cinnamon, and sugar.
- In another bowl, beat together milk, eggs, melted butter, and vanilla until smooth.
- Gradually combine wet and dry mixtures while gently folding until just combined; avoid overmixing.
- Fill muffin cups two-thirds full and sprinkle cinnamon sugar topping over each.
- Bake for 18-20 minutes until golden brown; a toothpick inserted should come out clean.
- Allow to cool slightly before serving.
