Description

Cinnamon Sugar French Toast Muffins are a delightful twist on breakfast, combining fluffy muffin texture with the classic flavors of French toast. Perfect for any morning or brunch gathering!

  • 2 tsp baking powder
  • 1 tsp ground cinnamon
  • 3/4 cup granulated sugar
  • 1 cup whole milk
  • 2 large eggs
  • 1/2 cup melted butter
  • 1 tsp vanilla extract
  • Cinnamon sugar topping (1/4 cup sugar mixed with 1 tbsp cinnamon)

Instructions

  1. Preheat oven to 350°F (175°C) and prepare a muffin tin by greasing or lining it with paper liners.
  2. In a large bowl, whisk together flour, baking powder, cinnamon, and sugar.
  3. In another bowl, beat together milk, eggs, melted butter, and vanilla until smooth.
  4. Gradually combine wet and dry mixtures while gently folding until just combined; avoid overmixing.
  5. Fill muffin cups two-thirds full and sprinkle cinnamon sugar topping over each.
  6. Bake for 18-20 minutes until golden brown; a toothpick inserted should come out clean.
  7. Allow to cool slightly before serving.
