  • 1 ½ cups crushed graham crackers
  • ½ cup unsalted butter, melted
  • ¾ cup granulated sugar, divided
  • 24 oz cream cheese, softened
  • 1 cup sour cream
  • 1 tsp pure vanilla extract
  • 3 large eggs

Instructions

  1. Preheat oven to 325°F (163°C).
  2. Mix crushed graham crackers with melted butter and half of the sugar; press into the bottom of a springform pan.
  3. Beat cream cheese until smooth; gradually add remaining sugar. Mix in eggs one at a time, then add sour cream and vanilla.
  4. Pour filling into the crust and bake for 55-60 minutes until slightly jiggly in the center.
  5. Cool in the oven with the door cracked for an hour, then refrigerate for at least 4 hours before serving.
