  • 4 boneless, skinless chicken breasts (1.5 lbs)
  • 3 cloves garlic, minced
  • 1 medium yellow onion, chopped
  • 2 tbsp curry powder
  • 1 can (13.5 oz) coconut milk
  • 1/4 cup low-sodium soy sauce
  • 2 cups chicken broth
  • 2 cups cooked rice (for serving)

Instructions

  1. Prepare the ingredients by chopping the onion and mincing the garlic.
  2. In a large skillet over medium heat, heat oil and sauté the onion until translucent (about 5 minutes). Add garlic and cook for an additional minute.
