Description

Coconut cream pie bars are the ultimate tropical dessert, combining a buttery graham cracker crust with a luscious coconut filling that melts in your mouth. Ingredients

  • 1 cup graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1/4 cup granulated sugar
  • 1 can (13.5 oz) coconut milk
  • 1 cup shredded coconut (sweetened or unsweetened)
  • 3 large eggs
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare an 8×8 inch baking dish with nonstick spray.
  2. In a bowl, mix graham cracker crumbs, melted butter, and sugar until combined. Press into the bottom of the baking dish.
  3. In another bowl, whisk eggs until fluffy; then add coconut milk, shredded coconut, sugar, and vanilla extract. Mix until smooth.
  4. Pour the filling over the crust and spread evenly. Bake for 25-30 minutes until set in the center.
  5. Let cool completely at room temperature before chilling in the fridge for at least two hours.
  6. Once chilled, slice into squares and serve.
