- 1 cup graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 1/4 cup granulated sugar
- 1 can (13.5 oz) coconut milk
- 1 cup shredded coconut (sweetened or unsweetened)
- 3 large eggs
- 1 tsp vanilla extract
Instructions
- Preheat your oven to 350°F (175°C) and prepare an 8×8 inch baking dish with nonstick spray.
- In a bowl, mix graham cracker crumbs, melted butter, and sugar until combined. Press into the bottom of the baking dish.
- In another bowl, whisk eggs until fluffy; then add coconut milk, shredded coconut, sugar, and vanilla extract. Mix until smooth.
- Pour the filling over the crust and spread evenly. Bake for 25-30 minutes until set in the center.
- Let cool completely at room temperature before chilling in the fridge for at least two hours.
- Once chilled, slice into squares and serve.
