  • 1 lb ground meat (beef, chicken, or turkey)
  • 2 tsp curry powder
  • 1 can (13.5 oz) full-fat coconut milk
  • 1 tbsp fresh ginger, grated
  • 3 cloves garlic, minced
  • 1/4 cup chopped cilantro (for garnish)
  • 1 cup low-sodium vegetable broth
  • 2 tbsp fresh lime juice
  • 2 tbsp low-sodium soy sauce

Instructions

  1. In a large bowl, mix ground meat with curry powder, minced garlic, grated ginger, and a pinch of salt until just combined.
  2. Roll the mixture into golf ball-sized meatballs and place them on a parchment-lined baking sheet.
  3. Heat oil in a large skillet over medium heat and sear the meatballs until browned on all sides (about 5 minutes). Remove from skillet and set aside.
  4. In the same skillet, add coconut milk, vegetable broth, soy sauce, and lime juice. Stir well while scraping up browned bits from the bottom.
  5. Return meatballs to the skillet and let simmer on low heat for 15-20 minutes until cooked through.
  6. Adjust seasoning if necessary and garnish with freshly chopped cilantro before serving.
