  • 1 ½ cups graham cracker crumbs
  • ⅓ cup unsalted butter (melted)
  • 16 oz cream cheese (softened)
  • 1 cup granulated sugar
  • ½ cup key lime juice (freshly squeezed)
  • ½ cup coconut cream
  • 3 large eggs
  • 1 cup coconut flakes (sweetened or unsweetened)

Instructions

  1. Preheat oven to 350°F (175°C). In a bowl, mix graham cracker crumbs and melted butter; press into the bottom of a greased baking pan.
  2. Bake crust for 10 minutes until golden brown; let cool.
  3. In another bowl, beat cream cheese and sugar until smooth. Add key lime juice and coconut cream; mix until combined.
  4. Add eggs one at a time, mixing well after each addition. Fold in coconut flakes gently.
  5. Pour filling over cooled crust and bake for 25-30 minutes until set but slightly jiggly in the center.
  6. Cool at room temperature, then chill in the fridge for at least two hours before slicing.
