Ingredients
- 1 cup mascarpone cheese
- 1 cup full-fat coconut cream
- 4 large egg yolks
- ½ cup granulated sugar
- ½ cup light or dark rum
- 24 ladyfingers (savoiardi)
- ¼ cup unsweetened cocoa powder (for dusting)
- 1 tsp ground cinnamon
Instructions

- Stir in the rum until fully incorporated. Taste and adjust the rum if desired.
- In a shallow dish, combine equal parts coconut cream and water. Quickly dip each ladyfinger into this mixture to absorb some moisture without getting soggy.
- Layer soaked ladyfingers at the bottom of your serving dish, then spread half of the mascarpone mixture over them evenly.
- Repeat layering with remaining soaked ladyfingers followed by the rest of the mascarpone mixture. Smooth out the top.
- Cover with plastic wrap and chill in the refrigerator for at least four hours or overnight.
- Before serving, dust generously with cocoa powder and sprinkle ground cinnamon on top.
