Description

Coquito Tiramisu is a delightful fusion dessert that combines the rich, creamy flavors of traditional tiramisu with the tropical essence of coquito.   • 1 cup mascarpone cheese
  • 1 cup full-fat coconut cream
  • 4 large egg yolks
  • ½ cup granulated sugar
  • ½ cup light or dark rum
  • 24 ladyfingers (savoiardi)
  • ¼ cup unsweetened cocoa powder (for dusting)
  • 1 tsp ground cinnamon

Instructions

  1. In a large mixing bowl, whisk together egg yolks and sugar until thick and pale. Gradually add mascarpone cheese and coconut cream; mix until smooth.
  2. Stir in the rum until fully incorporated. Taste and adjust the rum if desired.
  3. In a shallow dish, combine equal parts coconut cream and water. Quickly dip each ladyfinger into this mixture to absorb some moisture without getting soggy.
  4. Layer soaked ladyfingers at the bottom of your serving dish, then spread half of the mascarpone mixture over them evenly.
  5. Repeat layering with remaining soaked ladyfingers followed by the rest of the mascarpone mixture. Smooth out the top.
  6. Cover with plastic wrap and chill in the refrigerator for at least four hours or overnight.
  7. Before serving, dust generously with cocoa powder and sprinkle ground cinnamon on top.
