  • 1 medium green cabbage, cut into wedges
  • 4 large carrots, chopped
  • 1 yellow onion, chopped
  • 3 garlic cloves, minced
  • 2 tablespoons pickling spices
  • 4 cups low-sodium beef broth or water

Instructions

  1. Rinse the corned beef under cold water to reduce saltiness. Chop the onion, carrots, and cabbage into uniform pieces.
  2. In a large pot or Dutch oven, place the corned beef and cover with beef broth or water. Sprinkle pickling spices on top.
  3. Bring to a boil over medium heat, then add chopped onions and carrots. Reduce heat to low and let simmer.
  4. After 2 hours, add cabbage wedges to the pot and continue simmering until the corned beef is fork-tender (approximately 3 hours total).
  5. Remove the brisket from the pot and let it rest before slicing against the grain. Serve with vegetables drizzled in cooking liquid.
