- 4 lbs corned beef brisket
- 1 medium green cabbage, cut into wedges
- 4 large carrots, chopped
- 1 yellow onion, chopped
- 3 garlic cloves, minced
- 2 tablespoons pickling spices
- 4 cups low-sodium beef broth or water
Instructions
- Rinse the corned beef under cold water to reduce saltiness. Chop the onion, carrots, and cabbage into uniform pieces.
- In a large pot or Dutch oven, place the corned beef and cover with beef broth or water. Sprinkle pickling spices on top.
- Bring to a boil over medium heat, then add chopped onions and carrots. Reduce heat to low and let simmer.
- After 2 hours, add cabbage wedges to the pot and continue simmering until the corned beef is fork-tender (approximately 3 hours total).
- Remove the brisket from the pot and let it rest before slicing against the grain. Serve with vegetables drizzled in cooking liquid.
