  • 2 cups cooked corned beef, diced
  • 2 cups russet potatoes, peeled and diced (about 2 medium potatoes)
  • 1 cup sweet onion, chopped
  • 1 cup bell peppers, chopped (any color)
  • 4 large eggs
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • 1 tsp dried thyme or parsley (optional)

Instructions

  1. Prep your ingredients by dicing cooked corned beef and peeling/dicing the potatoes.
  2. In a large skillet over medium heat, heat olive oil. Add the diced potatoes, season with salt and pepper, and cook until golden brown and tender, about 10-15 minutes.
  3. Add chopped onions and bell peppers; sauté for an additional 5 minutes until softened.
  4. Stir in the diced corned beef and cook for another 5 minutes to heat through.
  5. In a separate pan, fry eggs sunny-side-up or to your preference.
