  • 1 lb ground beef
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 bell peppers, diced (any color)
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (15 oz) kidney beans, drained
  • 1 cup corn (frozen or canned)
  • 4 cups low-sodium beef broth
  • 1 tbsp chili powder
  • 1 tsp cumin
  • Salt and pepper to taste

Instructions

  1. In a large pot over medium heat, brown the ground beef for 6–8 minutes until fully cooked. Drain excess fat if necessary.
  2. Add diced onion and minced garlic; sauté for about 3–4 minutes until softened.
  3. Stir in diced bell peppers, canned tomatoes (with juices), corn, and kidney beans. Mix well.
  4. Pour in beef broth along with chili powder and cumin; stir to combine.
  5. Bring to a boil, then reduce heat and simmer uncovered for 20 minutes to meld flavors.
  6. Serve hot, garnished with fresh cilantro or shredded cheese if desired.
